Red Curry Wonton Soup

Ingredients

  • 24 frozen wontons or dumplings

  • Bunch of asian greens

  • 1 tbsp oil

  • 1 onion, finely chopped

  • 1 piece of ginger, grated

  • 2 garlic cloves, minced

  • 4 tbsp red curry paste

  • 4 cups chicken stock

  • 1 can coconut milk

  • 1 and 1/2 tbsp sugar

  • 1 tbsp fish sauce

  • Lime juice to taste

  • Fresh herbs (spring onion, coriander or Thai basil) for garnish


Instructions

  1. Heat oil in a large pot over medium heat and add onion ginger and garlic. Cook for 2-3 minutes, stirring until fragrant and soft

  2. Add red curry paste and cook for another minute before mixing in the chicken stock, coconut milk, sugar and fish sauce. Bring to a boil and reduce to a simmer for 10 minutes before finishing with lime juice

  3. Boil wontons and asian greens in a separate pot following the package instructions if any

  4. Transfer wontons and greens to a bowl before ladling the hot broth over top

  5. Garnish with herbs and enjoy!
