
Red Curry Wonton Soup

Ingredients
24 frozen wontons or dumplings
Bunch of asian greens
1 tbsp oil
1 onion, finely chopped
1 piece of ginger, grated
2 garlic cloves, minced
4 tbsp red curry paste
4 cups chicken stock
1 can coconut milk
1 and 1/2 tbsp sugar
1 tbsp fish sauce
Lime juice to taste
Fresh herbs (spring onion, coriander or Thai basil) for garnish
Instructions
Heat oil in a large pot over medium heat and add onion ginger and garlic. Cook for 2-3 minutes, stirring until fragrant and soft
Add red curry paste and cook for another minute before mixing in the chicken stock, coconut milk, sugar and fish sauce. Bring to a boil and reduce to a simmer for 10 minutes before finishing with lime juice
Boil wontons and asian greens in a separate pot following the package instructions if any
Transfer wontons and greens to a bowl before ladling the hot broth over top
Garnish with herbs and enjoy!
