Ingredients:

  • 8 ounces pasta (such as penne or fusilli)

  • 1 cucumber, diced

  • 1 cup cherry tomatoes, halved

  • 1/2 red onion, thinly sliced

  • 1/2 cup feta cheese, crumbled

  • 3 tablespoons olive oil

  • 2 tablespoons lemon juice

  • 2 tablespoons fresh oregano, chopped

  • Salt and pepper to taste

Instructions:

  1. Cook the pasta according to the package instructions until al dente. Drain and rinse with cold water to stop the cooking process. Set aside.

  2. Dice the cucumber, halve the cherry tomatoes, and thinly slice the red onion.

  3. In a large mixing bowl, combine the cooked pasta, diced cucumber, halved cherry tomatoes, sliced red onion, and crumbled feta cheese.

  4. In a small bowl, whisk together the olive oil, lemon juice, chopped fresh oregano, salt, and pepper.

  5. Pour the dressing over the salad ingredients in the mixing bowl. Gently toss everything together until well combined and evenly coated with the dressing.

  6. Cover the bowl and refrigerate the Vegetarian Greek Pasta Salad for at least 30 minutes to allow the flavors to meld together.
