Grilled Vegetable Summer Salad

Time: 20 min Servings: 4 Oven: 375F

Ingredients

  • 1 lb zucchini, chopped

  • *Optional - head of lettuce of choice

  • 1/2 bunch asparagus, whole

  • 2 bell peppers, chopped

  • 1 tbsp olive oil

  • 1 tsp salt

  • 4 precooked sausages, sliced

  • 1 lb small potatoes, halved

  • 1/3 cup red onion oil (substitute for oil of choice)

  • 2 ounces feta cheese, crumbled

  • 2 tbsp balsamic vinegar

  • 1/4 cup basil, ribbon cut

  • *Optional - taziki sauce

Instructions

  1. Begin by boiling your halved potatoes in a pot of salted water until tender

  2. Once potatoes are done, remove and set on a baking tray. Smash potatoes down until flat. Add sausages, zucchini and asparagus to your baking tray. Lightly drizzle the olive oil. Season with salt (or any other seasonings of choice) and bake in the oven at 375F until crispy (about 20-30min). Another option is to use an air-fryer or BBQ for extra crispiness.

  3. As vegetables and sausages are baking, mix your dressing ingredients together in a small bowl. Oil, salt and balsamic vinegar. Set aside.

  4. To assemble, first start with lettuce topped with grilled veggies, potatoes and sausages. Finally, top off with feta cheese, vinaigrette, and taziki sauce
