Creamy Chicken Noodle Soup

Ingredients

  • 4-5 tbsp olive oil

  • 1 lb chicken breasts

  • 2 tsp cumin

  • 2 tsp poultry seasoning

  • 2 tsp ground ginger

  • 2 tsp red pepper flakes

  • Salt and pepper

  • 2 carrots, chopped

  • 1 onion, chopped

  • 2 celery, chopped

  • 4-6 garlic cloves, minced

  • *Optional - 2 tbsp butter + 2 tbsp flour

  • 2 tsp thyme

  • 2 tbsp dried dill

  • 32 oz chicken broth

  • 1/2 lb egg noodles

  • 1/4 cup cream

  • Garnish - dollop of plain greek yogurt and drizzle of balsamic glaze

Instructions

  1. In a large pot over medium heat, add olive oil. When it begins to show that it's shimmering, add the chicken and all seasonings. Cook the chicken on both side for about 6-8 minutes. Remove fully cooked chicken

  2. In the same pot, add in onion, carrot, celery and garlic. Sauté until everything becomes soft and glossy. While cooking, cut cooked chicken to desired size

  3. Add back in the chicken. For a creamier soup, add the butter to melt and coat everything in flour. Add fresh herbs and slowly add the broth in parts, stirring as you go.

  4. Bring mixture to a simmer once broth is fully added before adding egg noodles. Add in cream during this step.

  5. Garnish with a dollop of plain greek yogurt and a drizzle of balsamic glaze.
