Zucchini Lasagna Roll Ups

Time: 1 hr Servings: 3-4 Oven: 400F

Ingredients

  • 2-3 Large Zucchinis

  • 1/2 lb ground meat of choice

  • 1 onion, diced

  • 3 cloves garlic, minced

  • 1 tsp Italian seasoning

  • Pasta sauce of choice

  • Ricotta cheese

  • Parmesan cheese

  • Salt and pepper to taste

  • Olive oil

Instructions

  1. Slice the zucchini length way about 1/4 inch thick. Lay zucchini slices flat on a baking tray and spray with some olive oil. Toss in the oven for 10 minutes to soften.

  2. In a pan on medium heat, add some olive oil, ground chicken, onion, garlic, Italian seasoning and salt and pepper. Cook until meat is cooked through.

  3. When zucchini slices are finished softening, allow them to cool before handling.

  4. Line a small baking dish with pasta sauce.

  5. To assemble, layer some ricotta cheese, pasta sauce and meat mixture flat on to a zucchini slice. Roll the zucchini slice and place facing up in the dish. Repeat for all slice and until baking dish is full.

  6. This is very messy, I recommend topping the zucchini in the baking dish with all the innards that fell out while rolling. Finish topping with a little more pasta sauce and parmesan cheese.

  7. Bake for 20 min and enjoy with your favourite side dish!
