One-Pot Creamy Pesto Gnocchi with Chicken Sausage

Ingredients

  • 1 white onion, diced

  • 1 zucchini, chopped

  • 1 yellow bell pepper, chopped

  • 12oz chicken sausage

  • 1 tsp olive oil

  • 2 garlic cloves, minced

  • 2 tsp Italian seasoning

  • salt & pepper to tast

  • 1/2 cup pesto

  • 1 and 1/4 cup chicken broth

  • 1/2 cup heavy whipping cream

  • 32oz potato gnocchi

  • grated parmesan to top


Instructions

  1. Heat olive oil in a large sauté pan.

  2. Cook chicken sausage until outsides are browned.

  3. Add in onion, zucchini, bell pepper, garlic, and seasonings.

  4. Sauté until veggies are tender.

  5. Stir in pesto, chicken broth, and heavy cream until bubbly.

  6. Mix in gnocchi, cover, and simmer about 15 minutes until gnocchi is cooked and sauce is thickened.

  7. Top with grated parmesan.
