Cabbage and Sausage Sheet Pan

Ingredients

  • 1/2 green cabbage, sliced in 1 inch pieces

  • 4 Yukon gold potatoes, chopped into 1 inch pieces

  • 2 tbsp olive oil

  • 1/2 tsp salt

  • 5 sausages of choice, cut into 2 inch pieces


Sauce

  • 1/3 cup of mayonnaise, sour cream or plain greek yogurt

  • 2 tbsp cream

  • 1 and 1/2 tsp apple cider vinegar

  • 1/2 tsp dried dill

  • 1/2 tsp paprika

  • 1/2 tsp sugar

  • 1 garlic clove, minced


Instructions

  1. Preheat oven to 425F

  2. Preferably, place chopped potatoes into an air-fry basket and air-fry at 360F for 35 min. If unable to use an air-fryer, place potatoes on a lined baking sheet along with the cabbage. Drizzle with olive oil and season with salt, tossing until well mixed. Nestle chopped sausage within the cabbage and potatoes and bake in the oven for 30-35 min, stirring half-way through.

  3. Meanwhile, in a small bowl, whisk together the sauce ingredients until well combined.

  4. Drizzle sauce over the cabbage, potato and sausage mixture. Serve immediately.
