Ingredients

  • 4 chicken breasts

  • 4 cups potatoes, diced

  • 6 cloves garlic, minced

  • Juice of 2 lemons

  • 1/4 cup olive oil

  • 1 teaspoon dried oregano

  • 1 teaspoon dried thyme

  • Salt and pepper to taste

  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat the oven to 400°F (200°C).

  2. Pat the chicken breasts dry with paper towels and season them generously with salt and pepper. In a large mixing bowl, combine the diced potatoes, minced garlic, lemon juice, olive oil, dried oregano, dried thyme, salt, and pepper. Toss until the potatoes are evenly coated.

  3. Arrange the seasoned potatoes in a single layer on a baking sheet or roasting pan. Place the seasoned chicken breasts on top of the potatoes.

  4. Transfer the baking sheet or roasting pan to the preheated oven. Roast for 25-30 minutes, or until the chicken is cooked through and the potatoes are golden and tender.

  5. Use a meat thermometer to ensure the chicken has reached an internal temperature of 165°F (75°C).
