Ingredients
4 boneless salmon fillets
1/4 cup flour
1 tsp garlic powder
1 tsp salt
1/2 tsp black pepper
1/2 tbsp olive oil
6 tbsp butter
2 cloves of garlic, minced
1/2 cup stock
1 tbsp parsley
1 lemon
Instructions
In a large shallow dish, combine flour, garlic powder, salt and black pepper. Coat each salmon fillet, giving them a shake before placing on one side.
Add olive oil into a large pan over medium heat. Once hot, add fillet and fry for around 3 minutes or until they build a golden crust on the bottom. Carefully flip them over and fry for another 3 minutes or until golden brown. Add in 1 tsp of butter and baste the fillets for a minute or so. Remove from pan.
Add garlic into the same pan and fry until it just begins to take colour. Pour in stock and scrape any flavour off the bottom of the pan. Add in the remaining butter and whisk with the stock and turns it cloudy. Add parsley and a punch of salt and pepper.
Simmer for a few minutes, stirring as you go until sauce begins to thicken. Turn heat to low and add the salmon back in. Baste in the sauce to warm it through, then serve with more sauce and a squeeze of the lemon.
