Steak with Roasted Vegetables

Ingredients
For the steak:
2 steak cuts (such as ribeye, sirloin, or New York strip)
2 tablespoons olive oil
2 cloves garlic, minced
1 tablespoon steak seasoning of choice
Salt and black pepper to taste
For the roasted vegetables:
2 cups mixed vegetables (such as bell peppers, zucchini, cherry tomatoes, red onion)
2 tablespoons olive oil
2 cloves garlic, minced
Salt and black pepper to taste
Fresh parsley, chopped (for garnish)
Instructions
In a small bowl, mix together olive oil, minced garlic, Italian seasoning, salt, and black pepper. Rub the mixture all over the steak cuts.
Heat a cast-iron pan on high heat.
Once hot, drizzle some olive oil to prevent sticking and sear the steak on each side for about 4-5 min on each side for a medium-rare steak. Place the pan in the oven at 400F until steak reaches an internal temperature of 130 degrees.
In another bowl, toss together the mixed vegetables, olive oil, minced garlic, balsamic vinegar, salt, and black pepper until well coated.
Arrange the vegetables in the baking dish or air-fryer basket.
If using the oven, roast the vegetables for about 15-20 minutes, or until the vegetables are tender.
If using the air-fryer, cook the vegetables at 400F for about 10-15 minutes, flipping halfway through cooking.
Once done, remove vegetables from the oven or air-fryer.
Serve the sliced steak with the roasted vegetables, garnished with fresh chopped parsley.
