Hollandaise Sauce

Ingredients
1 cup of butter
2 egg yolks
1 tbsp lemon juice
1 tbsp dijon
salt, pepper and paprika to taste
Instructions
Melt butter in a pan or microwave until melted
In a bowl, wisk together egg yolks, lemon juice and dijon on high speed with an immersion blender
Slowly combine in the melted butter as you blend
