Greek Style Beef and Vegetable Skewers

Ingredients:

  • 1 lb steak (such as sirloin or ribeye), cubed

  • 2 bell peppers, cut into chunks

  • 1 red onion, cut into chunks

  • 1 cup cherry tomatoes

  • 3 tablespoons olive oil

  • 2 tablespoons lemon juice

  • 3 cloves garlic, minced

  • 1 teaspoon dried oregano

  • Salt and pepper to taste

Instructions:

  1. In a mixing bowl, combine the cubed steak with olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper. Toss until the beef is evenly coated in the marinade. Cover and refrigerate for at least 30 minutes, or up to 2 hours, to allow the flavors to meld.

  2. Preheat the grill or broiler to medium-high heat. Thread the marinated beef, bell pepper chunks, red onion chunks, and cherry tomatoes onto skewers, alternating between the ingredients.

  3. If using a grill, place the skewers directly on the grill grates. Grill for 8-10 minutes, turning occasionally, until the beef is cooked to your desired level of doneness and the vegetables are tender and slightly charred. If using a broiler, place the skewers on a broiler pan or baking sheet lined with aluminum foil. Broil for 6-8 minutes, turning halfway through cooking, until the beef is cooked through and the vegetables are tender and slightly charred.

  4. Once cooked, remove the skewers from the grill or broiler. Transfer the Greek Style Beef and Vegetable Skewers to a serving platter. Garnish with additional lemon wedges and fresh oregano if desired.
