Gnocchi Butternut Squash Bake

Time: 1 hr Servings: 4 Oven: 400F

Ingredients

  • 1 large butternut squash

  • 1 tsp thyme

  • 200g ricotta cheese

  • 500g gnocchi

  • 1 lemon

  • 1 garlic cloves

  • 1 cup greek yogurt

  • 1 tsp honey

  • salt and pepper to taste

  • 1/2 cup chicken stock

  • 4 tbsp breadcrumbs

  • 2 tbsp parmesan

  • 2 tbsp cheddar, shredded

Instructions

  1. Pre heat oven. Dice butternut squash into 2cm cubes and place on baking sheet. Drizzle olive oil on top and roast for about 30 min

  2. While squash is roasting, mix the ricotta with lemon and add a pinch of salt with a little minced garlic

  3. Cook gnocchi based on package instructions

  4. In a blender place in your greek yogurt, garlic, honey, and stock. When squash is finished roasting, add in half of the cubed squash and blend until sauce like consistency

  5. In the same baking dish, mix the other half of the cubed roasted squash with the cooked gnocchi. Sprinkle the thyme on top followed by clumps of the ricotta mixture, sauce, grated cheese, parmesan cheese and finally bread crumbs. Bake for another 10 min and enjoy!
