Fried Dumplings

Ingredients

  • 1 lb ground meat of choice (I like pork)

  • 4 large nappa cabbage leaves OR half a cabbage

  • 6 stalks of green onion

  • 7 shitake mushrooms

  • 2 garlic cloves

  • 3 tbsp minced ginger

  • 3 tbsp soy sauce

  • 2 tbsp cornstarch

  • 1 tbsp sesame oil

  • 2 tbsp oyster sauce

  • 36 dumpling wrappers

Instructions

  1. Mince all vegetables very small

  2. mix together all filling ingredients in a large bowl until extremely smooth. I like to use clean hands when mixing to ensure all ingredients and mixed together fully

  3. using a little water on your finger, wet the perimeter of a dumpling wrapper. In the centre, place about 1 tbsp of the filling and fold the edges of the dumpling wrapper closed until it is secure (this can be tricky if you have never folded a dumpling wrapper before! Check out videos on youtube or tiktok that share tips and tricks, I will add one to this recipe when I can!)

  4. Repeat steps 3 until you have used up the filling.

  5. Freeze or eat fresh! (If you decide to freeze them, do not thaw before cooking, the dough will stick and mush together. instead, cook from frozen)

  6. Pan fry - Heat a skillet over med heat with 2 tbsp of oil. Fry dumplings until golden brown and add 1/3 cup of water and cover with a lid. Cook until water has mostly boiled away. Remove lid and reduce heat to low. Cook for another 2 min before removing from the skillet\

  7. Steam - Place dumplings in a steamer basket on parchment paper or nappa cabbage leaves and steam for about 8-10 min
