Dump and Bake Chicken and Veg

Time: 30 min Servings: 4 Oven: 425F

Ingredients

  • Veggies of choice, chopped (I used butternut squash, broccoli, onion, carrot and garlic)

  • 500g chicken, cubed

  • 1.5 tbsp coriander

  • 2 tsp cumin

  • 2 tsp paprika

  • 1 tsp cinnamon

  • salt and pepper

  • 2 tbsp olive oil

  • 1 cup chicken stock

  • *optional - bunch of mint

  • 1 clove garlic, mined

  • 1 cup greek yogurt

  • 1 tbsp lemon juice

  • 1 tsp olive oil

  • 40g salted butter

  • 1 tsp paprika

Instructions

  1. Preheat oven and prep large baking tray

  2. Chop all veggies and lay on the baking sheet with chicken

  3. Sprinkle over all spices and toss. Pop tray in oven for 25 min

  4. In a bowl, mix together the minced garlic, yogurt, lemon juice, olive oil, salt and pepper and chopped mint leaves

  5. Meanwhile, in a small saucepan, melt and brown butter with paprika. Take off heat after a few moments

  6. To serve, divide chicken tray bake onto plates and top with the yogurt sauce. Drizzle on the paprika butter and enjoy
