Cinnamon Buns

Time: 3hr 30min Servings: 24 (large) OR 48 (small)

Ingredients

  • 4 eggs

  • 3 tsp salt

  • 1/4 cup soft butter

  • 1/3 cup oil

  • 4 cups warm milk

  • 2 tbsp yeast

  • 8-9 cups of flour

  • Melted butter

  • Cinnamon

  • Brown sugar

  • 1 block cream cheese

  • 1 cup powdered sugar

  • 1 tbsp milk

Instructions

  1. Add eggs to a mixer with sugar, salt, butter, oil and warm milk and mix

  2. Once mixed, sprinkle yeast on top and gently stir it in. Cover and proof for 5-10 min

  3. In a mixer, slowly incorporate the first 4 cups of flour

  4. Switch to a hook extension and slowly incorporate another 4 cups of flour

  5. When dough is too thick, switch to kneading with your hands and incorporate the last cup of flour

  6. Cover the bowl and let rise for 1 hr

  7. Flour your surface and dump out the dough. Pull dough toward the centre until it solidifies

  8. Place dough in a well greased bowl. Cover and let rise for another 1 hr

  9. Punch dough down and pour out onto a floured surface. Split the dough into 2 for larger cinnamon buns, 4 for smaller buns

  10. Roll out each dough ball into a large rectangle. Brush on melted butter and sprinkle on cinnamon and brown sugar (the secret is to sprinkle so much you can't see the dough underneath. Lots of cinnamon)

  11. Roll the dough up and cut into 2 inch sections

  12. Prep the baking dishes by coating it lightly in butter. Place the buns evenly on the dish with about 1 1/2 inches between them. Cover and let rise one last time for 20 min

  13. Bake in the oven at 350F for 20-25 min

  14. While buns bake, mix together the cream cheese, powdered sugar and milk to make a cream cheese icing

  15. *Optional - Brush on more butter when out of the oven

  16. Top with icing and enjoy
