Whipped Ricotta Sun-Dried Tomato Pasta

Time: 30 min Servings: 4

Ingredients:

  • sun-dried tomatoes

  • onion, chopped

  • 2 cloves garlic, chopped

  • 1 and 1/2 tsp paprika

  • red pepper flakes

  • 1 lb pasta

  • 3/4 cup ricotta

  • 1 and 1/2 tbsp lemon juice

  • 1/2 cup grated parmesan

  • 2 tbsp butter

  • 1 tbsp basil

  • 1 tbsp parsley

Instructions:

  1. Drain oil from the sun-dried tomato jar into a large pot. Chop the sun-dried tomatoes

  2. Set pot over med-high heat. Add the onions and garlic, cook until fragrant. Stir in sun-dried tomatoes, paprika, and other seasonings. Cook until tomatoes turn a deep red. add 3 1/2 cups of water. Bring to a boil and add in the pasta. Stir often until pasta is done.

  3. Meanwhile, whop the ricotta and lemon in a blender until creamy with salt.

  4. To the pasta, stir in parmesan and butter until very creamy. Remove from heat and stir in basil and parsley.

  5. Spoon some whipped ricotta to the bottom of a bowl and dish the pasta on top.
