Vegan Mediterranean Dinner

Ingredients
Tofu, pressed and cubed
1 tsp cumin
1 tsp paprika
1 tsp coriander
1 tbsp garlic powder
1 tbsp cornstarch
handful little potatoes
lettuce
onion, chopped
grape tomatoes, chopped,
cucumber, chopped
balsamic vinegar
lemon juice
hummus
Instructions
Boil potatoes in a pot of boiling water until fork tender
While potatoes are boiling, season tofu will all spices and cornstarch.
On a sheet pan lined with parchment paper, crush the fork tender potatoes and drizzle the potatoes and tofu with olive oil. Bake in oven at 375F for 1 hr
While tofu and potatoes are baking, cut up the onions, tomatoes and cucumbers and marinade in balsamic vinegar and lemon juice.
To assemble, line a bowl with lettuce, top with crispy tofu, potatoes, the vegetable marinade mix and a dollop of hummus. Enjoy
