Vegan Mediterranean Dinner

Time: 1 hr Servings: 4 Oven: 375F

Ingredients

  • Tofu, pressed and cubed

  • 1 tsp cumin

  • 1 tsp paprika

  • 1 tsp coriander

  • 1 tbsp garlic powder

  • 1 tbsp cornstarch

  • handful little potatoes

  • lettuce

  • onion, chopped

  • grape tomatoes, chopped,

  • cucumber, chopped

  • balsamic vinegar

  • lemon juice

  • hummus

Instructions

  1. Boil potatoes in a pot of boiling water until fork tender

  2. While potatoes are boiling, season tofu will all spices and cornstarch.

  3. On a sheet pan lined with parchment paper, crush the fork tender potatoes and drizzle the potatoes and tofu with olive oil. Bake in oven at 375F for 1 hr

  4. While tofu and potatoes are baking, cut up the onions, tomatoes and cucumbers and marinade in balsamic vinegar and lemon juice.

  5. To assemble, line a bowl with lettuce, top with crispy tofu, potatoes, the vegetable marinade mix and a dollop of hummus. Enjoy
