Tuscan Chicken Pasta

Time: 30 min Servings: 5

Ingredients

  • 1 (8 ounce) jar sun-dried tomatoes

  • 1 lbs boneless chicken, cubed

  • 4 tsp Italian seasoning

  • 1 tsp paprika

  • 3/4 cup parmesan

  • 2 tbsp butter

  • 1 onion, chopped

  • 1 lbs pasta

  • 1 cup cream

  • 1 cup water OR chicken stock

  • 1 tsp garlic salt

  • 2 tsp dijion mustard

  • 2 cup baby spinach

  • Juice of lemon

Instructions

  1. In a pan on medium heat, drizzle in some oil and the chicken with the Italian seasoning and paprika.

  2. Once cooked through, remove from pan and add in the butter, onion and garlic. Sauté until fragrant

  3. To the pan, add in raw pasta with the water, cream and parmesan

  4. Once pasta is done, mix in garlic salt, dijion, juice of lemon, baby spinach and the sun dried tomatoes

  5. When spinach cooks down, add back in the chicken and enjoy with parmesan on top
