Tomato and Egg Stir-Fry

Ingredients
1/2 tbsp chili oil
1 tbsp minced garlic
3 tomatoes, roughly chopped
1/2 tsp hoisin sauce
1/2 tsp sesame oil
1 tsp brown sugar
3 eggs
3 tbsp egg whites
2 cups rice of choice
1/4 cup water
salt and pepper to taste
Instructions
Rinse rice and cook according to package instructions
In a pan, heat the chili oil on medium heat with the minced garlic and sauté
Add in the tomatoes, hoisin sauce, sesame oil and brown sugar
In a separate pan, scramble the eggs over medium heat with the egg whites
Add water to the tomatoes before incorporating the scrambled eggs
Season with salt and pepper, serve over rice
