Tomato and Egg Stir-Fry

Ingredients

  • 1/2 tbsp chili oil

  • 1 tbsp minced garlic

  • 3 tomatoes, roughly chopped

  • 1/2 tsp hoisin sauce

  • 1/2 tsp sesame oil

  • 1 tsp brown sugar

  • 3 eggs

  • 3 tbsp egg whites

  • 2 cups rice of choice

  • 1/4 cup water

  • salt and pepper to taste

Instructions

  1. Rinse rice and cook according to package instructions

  2. In a pan, heat the chili oil on medium heat with the minced garlic and sauté

  3. Add in the tomatoes, hoisin sauce, sesame oil and brown sugar

  4. In a separate pan, scramble the eggs over medium heat with the egg whites

  5. Add water to the tomatoes before incorporating the scrambled eggs

  6. Season with salt and pepper, serve over rice
