Coconut Curry Noodles

Ingredients

  • diced onion

  • 1 tsp olive oil

  • 1 bell pepper, chopped

  • 10 ounces of cauliflower, chopped

  • 3 garlic cloves, minced

  • 1 package of stir-fry noodles

  • 3 tbsp red curry paste

  • 1 can coconut milk

  • 1/2 cup vegetable broth

  • 2 tsp soy sauce

  • 2 tbsp peanut butter

  • salt and pepper to taste

  • 3 handfuls of spinach

  • bean sprouts - *Optional

  • cilantro, chopped

  • lime juice from 1/2 a lime

  • chopped peanuts for garnish


Instructions

  1. Start boiling your water for your stir-fry noodles and begin sautéing your onions in a pan on medium heat with olive oil.

  2. Once onions are fragrant, add in the bell peppers, cauliflower and garlic. Sauté until veggies are soft. Add your stir-fry noodles to the boiling pot of water and cook according to package instructions. set aside once noodles are complete.

  3. Once veggies have cooked down, add in red curry paste, coconut milk and vegetable broth. Stir well and let simmer for about 5 minutes before adding in the soy sauce and peanut butter.

  4. Once peanut butter is melted and incorporated into the sauce, season with salt and pepper and add in your spinach and bean sprouts.

  5. Cook and mix until the spinach has wilted before adding in your stir-fry noodles. Mix thoroughly.

  6. Optional but highly recommended is to let the sauce sit in the mixture for about 15 minutes before eating

  7. Add in fresh cilantro on top before serving into bowls. Top with a fresh squeeze of lime juice and chopped peanuts.
