Ingredients
1 lb ground beef
2 cups pinto beans
1 zucchini, diced
1 cup shredded cheese
1 small avocado, diced
1 tsp taco seasoning
*Optional - 1 cup rice with 1 cup beef broth
Instructions
Start by browning the meat in a pan on medium heat. Add in beans, zucchini and taco seasoning once brown.
If adding rice, add it in at this point with a cup of beef broth. Cover and cook until rice is done.
Add shredded cheese on top and cover to melt.
Serve with fresh avocado slices and your choice of a side.
