Taco Skillet

Ingredients

  • 1 lb ground beef

  • 2 cups pinto beans

  • 1 zucchini, diced

  • 1 cup shredded cheese

  • 1 small avocado, diced

  • 1 tsp taco seasoning

  • *Optional - 1 cup rice with 1 cup beef broth

Instructions

  1. Start by browning the meat in a pan on medium heat. Add in beans, zucchini and taco seasoning once brown.

  2. If adding rice, add it in at this point with a cup of beef broth. Cover and cook until rice is done.

  3. Add shredded cheese on top and cover to melt.

  4. Serve with fresh avocado slices and your choice of a side.
