Spinach Chicken Pasta

Ingredients

  • 3 chicken breasts

  • 1 and 1/2 tsp garlic powder

  • 1/2 tsp cayenne

  • 1 tsp dried parsley

  • 1 tbsp olive oil

  • 2 tbsp butter

  • 1 small onion, diced

  • 3 garlic cloves, minced

  • 2 tbsp sun-dried tomatoes

  • 12 oz fettuccine

  • 1/2 tsp oregano

  • salt and pepper to taste

  • 2 tsp flour

  • 1 and 1/2 cups cream

  • handful of spinach

  • 3 tbsp parmesan

Instructions

  1. Begin by boiling a pot of water and cooking the fettuccine. Reserve 1/4 cup of pasta water

  2. Season the chicken with 1 tsp garlic powder, 1/4 tsp cayenne, 1/2 tsp parsley and olive oil. Place in a pan on medium heat and cook thoroughly

  3. When chicken is cooked, remove from pan

  4. Add in butter, onion and garlic to the same pan with the sun-dried tomatoes and all spices with flour. Stir for about 2 min

  5. Add in the cream and spinach

  6. When spinach is cooked, add back the chicken with parmesan and the pasta water

  7. Ensure the chicken is fully cooked through before mixing the fettuccine in the sauce and serving
