Spaghetti

Ingredients

  • 1/2 box of spaghetti noodles

  • 2 tbsp olive oil

  • 1 onion, diced

  • 1 clove minced garlic

  • 1 bell pepper, chopped

  • 10 mushrooms, chopped

  • 1 600ml can of tomato sauce

  • 2 tbsp red wine vinegar

  • 2 tbsp honey

  • 1 tsp onion powder

  • 1 tsp oregano

  • 2 tsp garlic salt

  • *Optional - 1 can of beans of choice

Instructions

  1. Boil spaghetti noodles in a pot of salted water until done. Reserve 1/4 cup of pasta water

  2. While pasta is cooking, sauté the onions and garlic together in the olive oil until onions are translucent

  3. Add in the bell peppers and mushrooms to the pan until as desired tenderness. About 3-4 min

  4. Mix in the tomato sauce, red wine vinegar, reserved pasta water and honey to the vegetables. If using beans, add them into the sauce at this point

  5. Let simmer for 5 min before adding in all spices. Mix and simmer for another 5 min

  6. Mix in the spaghetti noodles and serve with parmesan
