Sheet Pan Caprese Gnocchi

Time: 20 min Servings: 4 Oven: 400F

Ingredients

  • 1 pint of cherry tomatoes, halved

  • 1 lb package gnocchi

  • 2 tbsp olive oil

  • salt and pepper to taste

  • mozzarella balls

  • balsamic glaze

  • fresh chopped basil

Instructions

  1. Preheat oven to 400F.

  2. On a baking sheet, spread out tomatoes and gnocchi and drizzle with olive oil. Season with salt and pepper before placing in the oven for 15 min.

  3. Add in mozzarella balls and place back in the oven for 1 minute to melt.

  4. Drizzle on balsamic glaze and sprinkle with fresh chopped basil before serving.
