Red Rice Skillet Stir-Fry

Ingredients

  • 4 sausages (or meatless option, I suggest beyond meat sausages)

  • 3 bell peppers, chopped

  • 1 small onion, sliced

  • 3 cloves garlic, minced

  • 1 cup rice

  • 1 can tomato paste

  • splash red wine vinegar

  • Red pepper flakes to taste

  • 2 cups of vegetable stock

  • *Optional - handful of chopped mushrooms and any other veggies you would like to include

Instructions

  1. In a pan on medium heat, add some oil and brown the sausages until cooked through. Remove and set aside

  2. In the same pan, add in your chopped bell peppers with a splash of red wine vinegar. Sauté for a few minutes until desired tenderness. I would add any other hard vegetables that you would like to use in this step to soften them up. Remove and set aside

  3. Add in some more oil and sauté your onions and garlic until fragrant

  4. Add in your tomato paste, red pepper flakes, rice and stock. Stir to combine and bring to a bubble. Reduce to a simmer, cover and cook for about 10-12 min or until the rice has soaked up the liquid

  5. Add back your sausages, red peppers and any other soft vegetable you want to use up including mushrooms
