Pesto Creamy Chicken and Rice

Time: 20 min Servings: 3-4

Ingredients

  • 2 cups rice of choice

  • 2 large chicken breasts (4 small ones)

  • 3 tbsp pesto

  • handful of spinach

  • 1 tsp olive oil

  • 1 tsp paprika

  • 1 tsp oregano

  • 1 tsp salt

  • 1/2 cup cream

  • 3 tbsp water

  • handful cherry tomatoes, halved

Instructions

  1. Wash then cook the rice according to package instructions

  2. Season the chicken with paprika, oregano and salt on both sides.

  3. In a pan on medium heat, drizzle a little olive oil and cook the chicken on each side for a few minutes until cooked through. When chicken is finished, take out of the pan and set aside.

  4. In the same pan, add your tomatoes, spinach, pesto, cream and water until the spinach has wilted and the tomatoes are soft. A thick creamy sauce should begin to form. If not, add a little cornstarch slurry

  5. Once sauce is thick, add back chicken and cook for a few more minutes.

  6. To assemble, fill a bowl 1/2 way with rice. Top with chicken and sauce. Enjoy!
