Mediterranean Meatball Bowls

Ingredients


Meatballs

  • 1lb ground turkey or chicken

  • 1 tbsp paprika

  • 2 tbsp herbs such as dill, mint, basil, parsley or Italian mix

  • 1 tsp salt

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 2 tbsp olive oil

  • Optional - 1/4 cup panko and 1 egg


To assemble

  • Cucumbers, sliced

  • Cherry tomatoes, halved

  • Tzatziki

  • Red onion, chopped

  • Feta, Crumbled

  • Rice

  • Hummus

  • Olive oil

  • Herbs


Instructions

  1. Preheat oven to 350F

  2. In a large bowl, combine the ground meat, herbs, and seasonings. Mix until combined. With wet hands, form into meatballs.

  3. Heat up an oven-safe skillet over medium-high heat. Add the olive oil to heat for 1 minute.

  4. Add the meatballs to the heated skillet. Sear the meatballs for 2-3 minutes on each side, until golden-brown. Carefully transfer the skillet to the oven and cook for 10-12 minutes, until fully cooked.

  5. Assemble your Mediterranean power bowls with favourite toppings and meatballs.
