Meal-Prepped Hash-brown Breakfast Bowls

Per Serving: 256 Calories, 2.09g Fibre, 20.07g Protein

Ingredients

  • 650g of your choice of hash-browns

  • 6 pieces of bacon, chopped

  • 10 turkey sausages, pre-cooked and chopped

  • 2 cup cottage cheese

  • 1 cup egg whites

  • 1 large egg

  • 1 cup chopped green bell pepper

  • 3 large handfuls of spinach, cooked in 1 tsp of butter and salted to liking


Instructions

  1. *Optional - Toast up the hash-browns to your liking.

  2. Ensure the bacon and sausages are cooked through before chopping and placing into the mixture.

  3. Mix all ingredients in a large bowl and divide the mixture evenly into 6 microwave save Tupperware.

  4. Store in fridge for up to a week or freeze in freezer. If freezing, ensure the mixture is fully thawed before microwaving for 2 and 1/2 minutes.
