Lemon Garlic Chicken and Rice

Ingredients:

  • 2 boneless, skinless chicken breasts

  • 1 cup long-grain rice

  • 2 cups chicken broth

  • 1 lemon (zested and juiced)

  • 4 cloves garlic, minced

  • 1 teaspoon dried thyme

  • Salt and pepper to taste

  • 2 cups fresh spinach, chopped


Instructions:

  1. Preheat your oven to 375°F (190°C).

  2. Season chicken breasts with salt, pepper, and half of the minced garlic. Place the seasoned chicken in a baking dish.

  3. In a small bowl, combine the lemon zest, lemon juice, remaining minced garlic, and dried thyme.

  4. Pour half of the lemon mixture over the seasoned chicken, ensuring each breast is coated.

  5. Bake the chicken in the preheated oven for 20-25 minutes or until the internal temperature reaches 165°F (74°C).

  6. While the chicken is baking, rinse the rice under cold water until the water runs coear. In a saucepan, combine the rinsed rice and chicken broth. Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes or until the rice is cooked and the liquid is absorbed.

  7. Once the rice is cooked, fluff it with a fork.

  8. After the initial bake, pour the remaining lemon mixture over the chicken and bake for an additional 5-10 minutes until the chicken is golden and cooked through.

  9. In a separate pan, sauté chopped spinach over medium heat until wilted.

  10. Serve the lemon garlic chicken over a bed of fluffy rice, and top with sautéed spinach.

  11. Garnish with additional lemon slices and fresh thyme if desired.
