Lasagna Soup

Ingredients

  • 1 white onion, chopped

  • 2 cloves garlic, minced

  • 1/2 lb ground beef

  • *Optional - 1/2 lb italian sausage

  • 1 tsp oregano

  • 1 tsp chili flakes

  • salt and pepper

  • 2 tbsp tomato paste

  • 2 cup tomato sauce

  • 3 cups chicken stock

  • 1/2 cup cream

  • 1/2 box lasagna noodles, broken

  • 1/2 cup parmesan

  • 1/2 cup mozzarella

  • 1/2 cup fresh chopped basil

Instructions

  1. Sauté onion in olive oil over medium heat until translucent. Add in garlic, beef, sausage and season with salt and pepper, oregano and chili flakes.

  2. When meat is cooked, add tomato paste, tomato sauce, chicken broth and cream.

  3. Bring to a boil and then add in your broken lasagna noodles. Once noodles are cooked, finish off with parmesan and mozzarella cheese with basil and stir to combine.
