Feta Avocado Pasta

Ingredients
1/2 block feta cheese
1/2 cup greek yogurt, plain
1/2 avocado
2 garlic cloves
Handful cilantro
1 lime, juiced
Greek seasoning
Drizzle of oil
500g cooked pasta
*Optional - 1 chicken breast
1/2 onion
1/2 cucumber, cubed
1/2 red pepper, cubed
Handful cherry tomatos
Instructions
Begin by blending all the sauce ingredients together (feta cheese, greek yogurt, avocado, garlic, cilantro, lime juice, greek seasoning and a drizzle of oil). Add in feta cheese water to thin the sauce as needed.
Cook your choice of pasta until al dente. Set aside
Cut chicken breasts in half and season. Add to a medium hot oiled pan and fry for a few minutes to each side. Remove and set aside to rest
Cut all veggies and chicken and mix together with the pasta and sauce. Top with parmesan and enjoy
