Farmer Markers Pasta

Time: 20 min Servings: 5

Ingredients

  • zucchini, chopped

  • handful grape tomatoes

  • handful broccoli, chopped

  • handful carrots, chopped

  • onion, chopped

  • bell pepper, chopped

  • 1 tbsp nutritional yeast

  • pasta of choice

  • 1 can pasta sauce

  • 1 cup water

  • heaping handful of spinach

  • parmesan cheese

Instructions

  1. Sauté all vegetables in a pan with a drizzle of olive oil on med heat for 5 min

  2. Sprinkle on nutritional yeast and mix in with vegetables

  3. Add in sauce, pasta, water and cover for 10 min while pasta cooks

  4. Once pasta is al dente, add in spinach and let it cook down

  5. Top with parmesan cheese and enjoy
