Crispy Mushroom Chow Mein

Ingredients

  • 450 G egg chow mein noodles

  • 1 onion, thinly sliced

  • 2 slices ginger

  • 1 and 1/2 tbsp garlic, minced

  • 9 oz of mushroom of your choice

Sauce

  • 2 cups vegetable stock

  • 2 and 1/2 tbsp hoisin sauce

  • 1 tbsp sugar

  • 1/2 tbsp white pepper

  • 2 tbsp sesame oil

  • 1 and 1/2 tbsp cornstarch

  • 1 tbsp water

Instructions

  1. Prepare the noodles based on instructions on the packaging. You can also blanch noodles for 30 seconds and drain

  2. Add around 1 tbsp of oil to a pan on medium heat. Add in the noodles and spread them to fill the pan. Press down to mold the noodle

  3. Pan-fry the noodle to 3-4 min on each side or until crispy and golden brown

  4. *Optional - drizzle 1 tbsp of oil around the edges of the noodle to crisp it up

  5. Prepare the sauce by combining the stock, hoisin sauce, sugar, white pepper and sesame oil together. In a separate bowl, combine the cornstarch and water.

  6. Drizzle in oil in a separate pan on medium heat/ Ass in the sliced onion and ginger. Sauté together for 2-3 min

  7. Next, add in the mushroom and minced garlic. Sauté for another 2-3 min

  8. Drizzle in the sauce and simmer for another 2-3 min. Finally, ass in cornstarch mixture and simmer for 1 min to allow the sauce to thicken

  9. To assemble, start with crispy noodles, pour on the sauce and garnish with some green onions and sesame seeds if desired
