Creamy Sun-Dried Tomato Chicken Pasta

Time: 30 min Servings: 4

Ingredients

  • 1 jar oil-packed sun-dried tomatoes

  • 1 lb chicken breast, cubed

  • 4 tsp Italian seasoning

  • 1 tsp paprika

  • 3/4 cup parmesan

  • 1 onion, chopped

  • 2 cloves garlic, chopped

  • 1 lb pasta

  • 1/2 cup cream

  • 1/2 cup water

  • 2 tsp dijion mustard

  • 2 cups spinach

  • juice of 1 lemon

Instructions

  1. Cook the chicken in a pan on med-high heat in some of the sun dried tomato oil. Mix in 2 tsp of Italian seasoning and the paprika. Once cooked, mix in some parmesan and set aside

  2. Add in a little more oil and add in your onion and garlic. Cook until fragrant

  3. Add in your pasta, cream, water, dijon mustard and mix together. Cover and let pasta cook until Al-dente

  4. Mix in spinach and juice of 1 lemon. Finally, add back in the chicken and enjoy.
