Creamy Pesto Gnocchi

Time: 20 min Servings: 3

Ingredients

  • 500g of gnocchi

  • 2 tbsp butter

  • 2 cloves garlic, minced

  • 1/3 cup pesto

  • 1/2 cup cream

  • 1/2 cup parmesan

  • Salt and pepper to taste

  • *Optional - Sun-dried tomatoes and cherry tomatoes

Instructions

  1. Cook gnocchi according to package instructions and reserve 1/2 cup of starchy pasta water

  2. Melt butter and add garlic. Cook until fragrant

  3. Add pesto, cream and pasta water into the pan. Stir and cook until it begins to thicken

  4. If using sun-dried tomatoes and cherry tomatoes, add them in now

  5. Add parmesan cheese and salt and pepper. Continue to stir until cheese is melted and the sauce is thick

  6. Add in cooked gnocchi and remove from heat
