Creamy Broccoli Pasta

Time: 20 min Servings: 4

Ingredients

  • 250 grams of pasta

  • 2 tbsp olive oil

  • 1 onion, diced

  • 6 cloves of garlic, minced

  • 200 grams of cream cheese

  • 1 whole broccoli, trimmed

  • 250 ml heavy cream

  • 400 ml vegetable broth

  • 1 tsp red pepper flakes

  • 1 tsp basil

  • salt and pepper to taste

  • parmesan cheese to finish

Instructions

  1. Heat up some oil in a large skillet on medium heat and throw in onions. Once they are fragrant, add in garlic until golden brown.

  2. Add in the broccoli florets and let them sauté until they are tender and slightly browned. Pour in vegetable broth and let everything simmer for a few minutes.

  3. Add in cream cheese and stir until it is completely melted. Add in heavy cream and pasta. Toss together until everything is well coated in the sauce. Cover and let cook until everything is al dente. Season with red pepper flakes, basil, salt and pepper and finish with parmesan cheese.
