Chicken Teriyaki Meatball Bowls

Time: 30 min Servings: 4 Oven: 400F
Ingredients
Meatballs
1 lb ground chicken or turkey
1/3 cup of breadcrumbs
1 egg
1 tbsp soy sauce
1 tsp chili sauce or sriracha
2 cloves garlic, minced
1 tsp minced ginger
2 green onions, sliced
1/2 tsp salt
Teriyaki Sauce
1/4 cup hoisin sauce
2 tbsp soy sauce
2 tbsp honey
2 tsp cornstarch
Rice
2 cups rice, rinsed
2 and 1/4 cups water
Sautéed Veggies
Assorted vegetables, sliced thin
1 tsp sesame oil
Green onion and sesame seed to garnish
Instructions
Preheat oven to 400F. Add all ingredients under the meatball heading into a bowl and mix together thoroughly
Wet hands and roll meat into little balls, placing them on a baking sheet lined with parchment paper. bake for 20 min
While meatballs bake, cook your rinsed rice according to package instructions for about 18 min
Prepare sauce by mixing all ingredients together, microwaving as needed to throughly mix in the honey
In a separate pan, sauté assorted sliced veggies in some sesame oil until soft
When meatballs are done, add to bowl with teriyaki sauce and toss till evenly coated
To plate, start with rice, meatballs, veggies and garnish with sesame seeds and green onions
