Chicken Shawarma Rice Bowls

Ingredients

  • 3 large chicken breasts

  • 4-5 cloves garlic, minced

  • 2 tsp onion powder

  • 2 tsp dried parsley

  • 2 tsp paprika

  • 1.5 tsp salt and pepper

  • 3 tbsp lemon juice

  • 1 tbsp butter

Sauce

  • 3/4 cups greek yogurt

  • 1/4 cups mayonaise

  • 1 tbsp hot sauce of choice

  • 1/2 tsp salt and pepper

  • 1/2 tsp garlic, minced

  • 1/2 tsp onion powder

  • 1/2 tsp paprika

  • 1 tbsp lemon juice

Cucumber and Tomato Yogurt Mix

  • 1 pint cherry tomatos, halved

  • 1 large cucumber, cubed

  • 1/4 cup greek yogurt

  • season to taste salt, minced garlic, cumin and parsley

Golden Rice

  • 200g rice

  • 1 tsp turmeric

  • 1 tsp paprika

  • 1 tsp salt

  • 1 tsp cumin

Instructions

  1. Season chicken with all ingredients listed above except for butter. Rub in seasonings u til the color changes.

  2. Into a pan on medium heat, add in the butter and chicken. Cook until golden brown on both sides and remove. Cut into cubes once cooled.

  3. For the salad, mix all ingredients in a bowl and set aside.

  4. For the sauce, mix all ingredients in a bowl and set aside.

  5. For the rice, add all ingredients into a pot and cook according to package directions. Set aside.

  6. To assemble, add rice with cubed chicken on top and a healthy drizzle of the sauce. Add a spoonful of the salad off to the side and enjoy!
