Chicken Fajitas

Ingredients:

  • 1 lb chicken breasts, sliced

  • 2 bell peppers, sliced

  • 1 onion, sliced

  • 3 cloves garlic, minced

  • 2 tablespoons fajita seasoning (cumin, chili powder, paprika, garlic powder, onion powder, salt, pepper)

  • 2 tablespoons olive oil

  • 2 tablespoons lime juice

  • Tortillas, for serving

  • Optional toppings: shredded cheese, salsa, sour cream, avocado slices

Instructions:

  1. Slice the chicken breasts, bell peppers, and onion into thin strips. Mince the garlic cloves.

  2. In a bowl, combine the sliced chicken with 1 tablespoon of olive oil and the fajita seasoning. Mix well to coat the chicken evenly.

  3. Heat the remaining tablespoon of olive oil in a large skillet over medium-high heat. Add the seasoned chicken to the skillet and cook for 5-6 minutes, stirring occasionally, until browned and cooked through. Remove the chicken from the skillet and set aside.

  4. In the same skillet, add the sliced bell peppers and onion. Cook for 4-5 minutes, stirring occasionally, until the vegetables are tender-crisp.

  5. Return the cooked chicken to the skillet with the cooked vegetables. Add minced garlic to the skillet and stir well to combine.

  6. Drizzle lime juice over the chicken and vegetable mixture. Cook for an additional 1-2 minutes to allow the flavors to meld together. Serve the Chicken Fajita Skillet hot with tortillas and optional toppings such as shredded cheese, salsa, sour cream, and avocado slices.
