Butter Bean Skillet

Ingredients

  • 2 cans lima beans

  • 1 onion, diced

  • 3 cloves garlic, minced

  • 1/2 jar of sun-dried tomatoes plus oil, chopped

  • 1 tsp Italian seasoning

  • salt and pepper to taste

  • 1 can coconut cream

  • 3 handfuls of spinach


Instructions

  1. In a pan, pour in some of the sun-dried tomato oil and begin sautéing the onions, sun-dried tomatoes and garlic.

  2. After about 5 minutes, add in all seasonings and coconut cream.

  3. Once warm, add in your lima beans and spinach. Simmer on low for about 10 minutes or until spinach is wilted.
