Butter Bean Skillet

Ingredients
2 cans lima beans
1 onion, diced
3 cloves garlic, minced
1/2 jar of sun-dried tomatoes plus oil, chopped
1 tsp Italian seasoning
salt and pepper to taste
1 can coconut cream
3 handfuls of spinach
Instructions
In a pan, pour in some of the sun-dried tomato oil and begin sautéing the onions, sun-dried tomatoes and garlic.
After about 5 minutes, add in all seasonings and coconut cream.
Once warm, add in your lima beans and spinach. Simmer on low for about 10 minutes or until spinach is wilted.
