Beef Chow Fun Stir-Fry

Ingredients
1 beef slab
3 tbsp soy sauce
1 tbsp Chinese cooking wine
1 egg white
1 tbsp corn starch
1 tsp baking soda
1 white onion, sliced
1 tbsp dark soy sauce
1 tbsp oyster sauce
4 tbsp water
1 tbsp sugar
1/4 tsp white pepper
3 udon noodle bundles
1 package bean sprouts
1 green onion stalk, chopped
Instructions
Cut beef into thin pieces
Mix 1 tbsp of soy sauce, Chinese cooking wine, egg white, corn starch and baking soda in a bowl with beef strips and marinate for 30min
In another bowl, mix 2 tbsp of soy sauce with the dark soy sauce, oyster sauce, water, sugar and white pepper
When beef is finished marinating, cook beef on medium heat until brown on both sides, add in onion and cook until translucent (ensure your pan is as non-stick as possible)
Add in udon noodles and the sauce. Cook for about 2 min
Finally, add in bean sprouts and green onion
