Beans and Toast

Time: 35 min Servings: 4 Oven: 345F

Ingredients

  • 1 cup cherry tomatoes

  • 1/4 cup garlic cloves

  • rosemary to liking

  • 3 tbsp olive oil

  • 1/3 cup cannelloni beans

  • chili pepper flakes to liking

  • 2 tbsp greek yogurt

  • salt and pepper to taste

  • toast

Instructions

  1. Preheat oven to 345F.

  2. To a baking dish, add the tomatoes, garlic, 2 tbsp of olive oil, rosemary, chili pepper flakes, salt and pepper. Bake for 20 min or until the garlic and tomatoes are soft.

  3. Once done baking, take out, remove the rosemary stem and mash the garlic and tomatoes together. Add the beans and 1 tbsp of olive oil. Bake again for another 10 min.

  4. Take out, top with greek yogurt and enjoy with toast!
